Last Mini Lights Meeting about the Old Testament!

Yesterday was our last meeting about the Old Testament, so we made a collage of verses we collected.
The girls took a short fun quiz about the Old Testament stories they heard about.
And we had cupcakes for snack!
Next I am thinking about doing lessons about Fruits of the Spirit, before I do them about the New Testament.

Rose and Campfire

Last week was my dance recital and my dance teacher gave everyone a rose☺ I thought this was an awesome close up of it. Isn't it gorgeous?

On Memorial day we had a breakfast campfire! We had egg in a nest with bacon, yum! Food is usually so much better over a campfire☺
I wrote my name with a stick that had it's end sticking in the campfire for a while....and added my rose to the picture!

......Black-eyed Susans with a butterfly! Hey guys, this is my finished my picture! I did it in colored pencil. I'm still probably going to make the grass a little darker green, but other than that it's done! Let me know what you think in the comments.

Rhubarb Coffee Cake

Today we went on a fieldtrip to Winterthur Gardens, but I didn't bring my camera along so no pictures.... the poppies were in full bloom, amazingly gorgeous! That was my favorite there today.

But anyway, today I have a recipe for you! drum roll... 
Rhubarb Coffee Cake with Caramel Sauce!

It's VERY sweet, so for those of you who don't want the sweetness, cut down on the sugar. I like sweet but I still cut down on the sugar because it's a lot. (☺and because mom tells me to☺) Here is the original recipe:

yield: 18 servings

Cake:

1/2 cup shortening

1 1/2 cups sugar

1 egg

2 cups all-purpose flour

1 tsp. baking soda

1 cup buttermilk

1 1/2 cups finely chopped fresh or frozen rhubarb

Topping:

1/2 cup packed brown sugar

1/4 cup all-purpose flour

1 tsp. ground cinnamon

3 Tbsp. cold butter

Sauce:

1/2 cup butter, cubed

1 cup packed brown sugar

1/2 cup heavy whipping cream

Instructions:

In a large bowl, cream shortening and sugar until light and fluffy. Add egg; beat well. Combine flour and bakign soda; add to creamed mixture alternately with buttermilk. Fold in rhubarb. Transfer to a greased 13-in. x 9-in baking pan.

For topping, in a small bowl, combine the brown sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over batter.

Bake at 350 degrees fahrenheit for 30-40 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before serving.

For sauce, in a small saucepan, melt butter. Stir in brown sugar and cream; bring to a boil. Reduce heat; simmer for 3-4 minutes or until slightly thickened. Serve with warm coffee cake.

Okay so i drew this picture...but i can't think how to finish it. What should the person be taking a picture of? another person? a flower? it needs to be something that will fill the camera screen and the background of the picture. What do you think? Post a comment to let me know! Thank you!

Delicious Breakfast Fruit Smoothie!

This week I have been experimenting with making fruit smoothies. Currently they are my favorite breakfast☺. This morning I made a berry and kiwi smoothie... I'm not really making thankful lists on my blog anymore, but I'm so thankful for fruit smoothies!

It becomes a beautiful color!
 
Berry and Kiwi Smoothie
 
Makes 2-3 servings
(None of these are exact measurements)
 
Put in blender:
 
1/2 cup-1 cup vanilla yogurt (or plain if you don't want it as sweet)
1/4 cup-1/2 cup milk
 
1/2 cup-1 cup of frozen blueberries
1/2 cup rasberries
1 cup strawberries
1 kiwi sliced
 
A splash of vanilla
1 T. of honey
A squeeze of lemon
 
Blend it all together, and unless you want little gritty seeds from the rassberries and pieces from the blueberries, do it for a while. (mom was sitting at the table, and I did it so long she started to come over to get me to stop☺, but it turned out perfect!)
 
~Note: You can swap this recipe around with other fruits, e.g., frozen peaches, banana, pineapple. Another flavoring you can use is cinnamon~

Okay...this is going to be a mini awkward an' awesome post, along with spring photos.
 
'Cause I just realized something ...I didn't post about our trip to williamsburg!☺ooops.... that will just have to pass....
 
And an awesome thing is that we just had our evaluations this morning so we are finished with our school year! (except I have some science left.....but it doesn't feel like much! Welcome summer and crafts and projects and good books and running around outside!)
